London Borough of Jam was established in 2013 by pastry chef Lillie O’Brien. Based in London, LBJ preserves are made in small batches and cooked for a shorter time than most generic brands. Fruit-driven, rather than sugar-driven, LBJ uses natural, unrefined sugars and no commercial pectins. The preserves combine seasonal fruits – sourced in the UK, France, Italy and Spain – with unusual additions such as bay leaf, cardamom, cocoa nibs, lemon verbena, wild fennel pollen and verjuice to enhance the fruit flavors. The result is delicious.
